Breaking my fast with instant noodles. What? Isn't that unhealthy? Why would I do that?

I don't do this often, but today I ran out of things to eat. I looked around and grabbed a pack of a Thai brand instant noodle.... Oh My! I am about to eat something UNHEALTHY. This is wrong. Ouch! It's full of bad carb, salt, sugar, MSG, and things that has no business inside my body. BUT I DID IT ANYWAY!


No! I've got to dial it down a notch. It's got to - at least - be more consumable and less harmful.


I didn't grow up on instant noodles, but as a child who was often left at home with other people while my parents disappeared into their work life, I managed to sneak in a pack or two of instant noodles.

Let me share with you my quick and easy solution for breakfast when I'm pressed for time and need something satisfying yet healthy. It's a twist on instant noodles, making them not just less harmful but also nutritious—a lifesaver when you can't spare time for cooking.

My Love Affair with Instant Noodles

I have no ties with the companies behind the noodles I love, but Mama instant noodles have been a staple ever since my childhood. Back then, it was Yum Yum and then Wai Wai, which means "quickly, quickly" in Thai. This 'Mama' brand doesn't actually refer to 'mother'; it's more about fast and simple meals.

While shopping at an Asian store recently, I picked up what I thought was clear noodle soup, ideal for my routine. It turned out to be phố noodle or "senlek," which is just as delightful. And here's how I made my unique breakfast:

Add-In Ingredients

I toss in some eggs and bitter gourd. I also add Thai basil, known as horapa, which you may not find in regular stores, but it makes a big difference!

Seasoning Secrets

If you have namplaprik—a seasoned fish sauce—use it. Sometimes lime or pickled jalapeno vinegar goes well too. And for heat, you can't beat Thai chilies such as prikeenoosuan, though they can be hard to find in the USA.
